Ingredients

For the salmon tagliatelle

  • Fresh tagliatelle – 400 g
  • Smoked salmon – 300 g
  • Fresh cream – 200 ml
  • Whiskey – 1 shot glass
  • Parsley (optional) – to taste
  • Butter – 50 g
  • Salt – to taste

Melt the butter in a pan and add the smoked salmon cut into strips. Let it flavor for a minute.

Add the whiskey (or brandy or cognac) then add the fresh cream and a generous pinch of salt . Let cook for 4-5 minutes.

In the meantime, cook the tagliatelle in plenty of salted water. Drain them al dente and quickly sauté them in the pan. If you like, you can complete with a little fresh chopped parsley .

The procedure for preparing them with fresh salmon is the same.

How to make salmon tagliatelle without cream

Equally good are the salmon tagliatelle without cream. Despite the absence of this ingredient, the consistency of the dish is still creamy . What makes this possible? The addition of the pasta cooking water allows you to obtain an almost risotto-like consistency. The choice is yours whether to use fresh or smoked salmon . For 4 people you will need:

  • 400 g of fresh tagliatelle
  • 300 g of smoked salmon (500 g if fresh)
  • 1 shallot
  • 1/2 glass of white wine
  • salt to taste
  • 4 tablespoons of extra virgin olive oil
  1. In a large, non-stick pan, pour the oil and the chopped shallot . Let it brown over low heat.
  2. Cut the salmon into pieces and place it in the pan, seasoning it for a couple of minutes. Pour in the white wine and once it has evaporated, in the case of fresh salmon continue cooking for a couple of minutes, with smoked salmon turn off the heat and keep warm.
  3. Cook the tagliatelle in plenty of salted water, then drain them and sauté them in the pan with the salmon and a ladle of the cooking water .
  4. Season with fresh chopped parsley and serve. If desired, to give an extra note of freshness, flavor with grated lemon zest.

Conservation
