Tart with quince jam
Here is the ideal dessert for autumn (and not only): the tart with quince jam, rustic and simply delicious.
The tart with quince jam is a real delight, to be prepared in all seasons. But especially in autumn, where we can find the fantastic quinces , one of the most suitable fruits for the preparation of jams to combine with desserts, as in this case, or with savory recipes (have you ever tried it with meat?).
This tart can be prepared with common soft wheat flour , but it will also be delicious with a base of wholemeal pastry, spelled flour or, better yet, buckwheat . The plus of this tart is the quince jam. Let's see all the steps to make it happen.
How to prepare the quince jam tart recipe
- To prepare your quince jam tart, start with the jam . Wash them carefully and cut them into pieces , keeping the peel.
- Transfer them to a pan, sprinkle with lemon juice and add 450 g of sugar . Leave to cook for about 30 minutes or until they have almost fallen apart then, if desired, blend everything with an immersion blender. Stir often during cooking to prevent them from sticking to the bottom.
- While the jam is cooking, prepare the shortcrust pastry . Combine the flour , sugar and a pinch of salt in a bowl. Flavor with grated lemon zest and give a quick stir.
- Add the cold butter cut into cubes and mix with your fingertips until you obtain a crumbly mixture. Finally add the eggs , finishing kneading.
- Once you have a dough, wrap it in cling film and let it rest in the refrigerator for at least 30 minutes .
- Then roll it out with a rolling pin using two sheets of baking paper and transfer it into a 24-26 cm diameter tart mold .
- Remove the excess edges and fill with the now cold jam. With the leftover shortcrust pastry you can make decorations on the surface.
- Bake in the oven at 180°C for 35 minutes . Allow to cool completely before removing the cake from the mold.
To make this tart more rustic you can replace 100 g of 00 flour with the same weight of wholemeal, spelled or buckwheat flour. Keep in mind that quince jam can also be prepared with the Thermomix .
Conservation
Like all tarts, this one with apple jam can be kept for 4-5 days under a cake container.
