The tarte tatin is an upside-down dessert made with apples and typical of traditional French cuisine. Today we offer you a summer variant : the peach tarte tatin, a sort of upside-down tart that you can offer for breakfast or at the end of the meal with a scoop of ice cream.

The peculiarity of the tarte tatin lies entirely in the cooking technique: the sweet caramel and fruit are distributed on the bottom of the cake pan and then covered with the pastry. The cake must only be turned over once it has cooled after cooking.

Preparation of the peach tarte tatin

  1. First of all, pour the flour onto a work surface or into a bowl, make the classic fountain shape and pour the cold butter cut into cubes into the centre.
  2. Add the egg yolk and 70 grams of sugar, start kneading, add the milk and continue until you obtain a compact dough.
  3. Wrap the dough in cling film, place in the refrigerator and let rest for at least half an hour.
  4. Meanwhile, prepare the caramel by pouring the rest of the sugar into a saucepan, add a spoonful of water , put on the heat and cook until you have obtained the caramel.
  5. Line the bottom of a cake pan with a sheet of baking paper and spread the freshly prepared caramel on the bottom. Also arrange the peach segments (or if you prefer peaches cut in half).
  6. Take the pastry again, roll it out with a rolling pin and place it on top of the peaches. Remove the edges of excess dough, cover with aluminum foil and bake at 180°C for 20 minutes.
  7. After this time, remove the baking paper, bake again and continue cooking for another 15 minutes .

storage

This classic cake, but revisited thanks to the inclusion of peaches, is delicious still warm. We recommend eating it as soon as it is made, however you can keep it in the fridge for about 1-2 days under a special baking tray and warm it up for a few minutes in the oven before serving it. We do not recommend freezing in the freezer.
