For Sardinian cuisine, mazza frissa is prepared with only sheep's cream , semolina flour and honey . Today, however, we can replace the sheep's cream with a common cow's cream.

Preparation of the Sardinian mazza frissa recipe

  1. To begin with, take a large pot. Pour the whole amount of fresh cream into it.
  2. Place on the stove and start cooking.
  3. Season with a pinch of salt and wait for it to boil.
  4. At this point, lower the flame. You can start adding the fine semolina, slowly .
  5. Pour in two tablespoons at a time , stirring slowly with each addition. Wait to incorporate the powder perfectly before moving on to the next addition.
  6. Stir continuously, until the mixture begins to detach from the sides of the pot and releases all the fat.
  7. Turn off the stove and let it cool down. Meanwhile, pour the honey into a saucepan and let it melt a bit.
  8. Serve and cover with melted honey.

The typical recipe of mazza frissa is very simple to make at home. In a few minutes, you can serve a nutritious dish with an almost creamy consistency, to be accompanied with crunchy slices of bread.

Preservation is not recommended , because it should be served piping hot and immediately after preparation.
