Preparation for the tomato platters recipe

  1. To begin, take a knife and cut a cross at the base of the tomatoes.
  2. Then, heat a saucepan full of water and immerse them in it.
  3. Blanch for about 1 minute. Once done, let them cool.
  4. In the meantime, wash the platters under running water and cut the ends.
  5. Then, cut them into pieces or strips.
  6. Peel the tomatoes and cut their pulp into wedges, eliminating the internal part with the seeds.
  7. Pour the oil slowly into the bottom of a pan.
  8. Peel the onion and cut it finely into slices and add it to the oil; sauté for 5 minutes.
  9. Next, add the tomatoes and cook for 2 minutes. Then, you can also add the platters.
  10. Add a ladle of hot water, season with salt and pepper and close with a lid. Cook for 10 minutes .
  11. At this point, add the tomato sauce and cook for another 5 minutes.
  12. When the sauce has reduced, you can turn it off and serve.

storage

Tomato platters are a genuine side dish that is very easy to prepare, to be combined with second courses of meat or fish. You can store them for a maximum of 3 days in the fridge.
