Crispy tortillas stuffed with bean cream, meat and vegetables. Here's what the typical tostadas of Mexican cuisine are and how they are prepared.

We are not the only ones who invent recycled recipes and pass them off as novelty and tostadas are an example of this. Typical of Mexican and Tex-Mex cuisine , they are prepared with tortillas that are too old to be served as burritos but still good to eat.

Therefore, following the principle according to which even shoe soles are good when fried , tostadas are nothing more than fried tortillas. The final crunchiness, similar to that of toast, meant that this dish became popular as street food , accompanied by fish, meat, salad and bean sauce .

In fact, it is the latter that binds all the ingredients together and gives the dish its characteristic flavour. Richer versions then include the addition of tomatoes, corn and avocado . In short, you can prepare tostadas however you like!

How to prepare tostadas with the Mexican recipe

  1. First, dedicate yourself to preparing the chicken . Slice it into rather thin strips as if they were rags and season them with a spoonful of lime juice, salt , pepper and smoked paprika .
  2. Heat a pan with a drizzle of oil then cook the chicken, very quickly, stirring often until it is crispy.
  3. Separately, heat two fingers of seed oil in a pan. When it has reached 180°C (you can check the temperature with a special kitchen thermometer) fry the tortillas one by one until they are golden and crispy.
  4. Drain them and pass them on absorbent paper to remove excess grease.
  5. Separately, prepare the bean cream. Blend them by adding a spoonful of lime juice, one of oil and a pinch of cumin .
  6. Distribute a spoonful of the cream obtained on each tortilla, place the meat and diced tomatoes . Top with parsley and chopped fresh onion and, on top, cheese and a spoonful of sour cream. If you like, you can also add iceberg lettuce and diced avocado.

Variations of the typical dish

There are other ways to prepare this unique dish or street food of Mexican origins, the most famous are 3: beef, tuna or shrimp tostadas.

The beef tostada usually involves the use of a mix of minced meat, cooked as for the chicken version and with the addition, again in this case, of black beans, vegetables and cheese. The version of tuna tostadas , however, are lighter and lower in calories. You can opt for either fresh tuna, to be cooked in a pan, or canned tuna, which is much quicker and seasoned with lime juice, aromatic herbs and finely chopped onion.

Lastly, let's talk about the prawn tostadas : in this version the crustacean is first cleaned, then you can decide whether to simply sauté it in the pan or bread it and fry it in hot oil.
