Tropea onion fritters
Onion fritters are prepared with very few ingredients, they are 100% vegetable and perfect as a quick appetizer.
Sometimes very little is needed to bring delicious appetizers to the table and onion pancakes are an example of this. Not to be confused with onion rings, they are prepared by combining finely sliced onions with a light batter based on water (or beer) and flour . Then fry everything in a little oil and serve hot.
Preparing this delicious appetizer is really simple and you can use the variety of onions you prefer : Tropea for a more delicate flavour, white or golden for a stronger flavour. We made them with the red ones, without adding other flavourings, but as always you can customize the recipe according to your tastes.
How to prepare onion pancakes recipe
- First, peel the onion and cut it into very thin slices using a mandolin. Then combine them in a bowl filled with cold water and leave them for about ten minutes. Finally, drain them and pat them dry with kitchen paper.
- In a separate bowl, prepare the batter by mixing flour and water and adding a pinch of salt and a generous grind of pepper. Add the onions and mix well.
- Heat a drizzle of oil in a pan and drop spoonfuls of dough, well spaced between them. Fry until they are golden brown and crispy on one side, then turn and continue cooking on the other side too.
- Once ready, drain them and pass them on absorbent paper before serving.
In a completely similar way you can prepare onion pancakes with beer batter. Simply replace the water with the same amount of beer to obtain a delicious appetizer that is even crunchier and tastier. Also try the courgette and carrot fritters : light and perfect to serve with a light sauce.

Onion pancakes are good freshly made . In fact, after a few hours they tend to lose their crunchiness.
