Delicate and decisive at the same time, the black truffle risotto recipe is able to satisfy even the most demanding palates.

Truffles are a very valuable ingredient , which can cost up to three thousand euros per kilo. In short, a real fortune, so if we decide to buy it we need to know how to make the most of it . Truffle risotto, prepared in the simplest way possible, allows you to fully savor its flavour.

There are two varieties of truffles, the white one and the black one. The first is the most valuable and fragrant, excellent for refined dishes such as tartare, but also served with simpler ingredients such as fried eggs.

How to prepare truffle risotto

  1. First, heat the vegetable broth until it comes to the boil.
  2. Heat a knob of butter in a pan, when it is nice and hot, add the finely chopped shallot and let it cook until it becomes translucent.
  3. Then add the rice and toast it for about 2 minutes .
  4. When it is shiny, blend with white wine . You will find that the alcohol will have evaporated simply by smelling the steam rising from the pot.
  5. Now add boiling broth in such quantity as to cover the rice. every time the rice has dried, add another ladle of broth. This phase is essential to obtain perfect cooking of the rice . We also advise you to mix it only after adding the broth and let it cook the rest of the time without disturbing it.
  6. Once cooked, remove from the heat and stir in the grated cheese and butter.
  7. Divide between plates and complete with a generous dose of black truffle sliced ​​with the appropriate mandolin.

Truffle risotto: the tastiest variant

If you want to make this risotto tastier and don't want to spare any expense, we recommend grating a generous dose of truffle with the kitchen utensil already during cooking (better if 6-5 minutes from the end ).

Don't forget to stir and top with truffle flakes on each portion.
