Unfried scapece courgettes
Tasty like the originals, non-fried courgettes alla scapece are light and perfect even for those on a diet.
Courgettes alla scapece are one of the recipes that I prepare most often when the good weather arrives and this vegetable, so versatile in the kitchen, makes its appearance in supermarkets. To make the dish lighter, instead of traditional frying, I opted for grilling , giving life to non-fried scapece courgettes, also perfect for those on a diet.
The term scapece refers to that particular vinegar -based condiment, which also serves as a preservative . Everything is then enriched with mint leaves, oil and garlic . In short, strong flavors that taste like summer for a truly delicious side dish or appetizer. Try them also on bread bruschetta and you won't regret it!
How to prepare the scapece courgette recipe
- First, wash the courgettes and remove the ends.
- Cut the courgettes into very thin slices. To carry out this operation I recommend using a mandolin to obtain strips approximately 2 mm thick .
- Heat a grill, lay out your slices and cook for two minutes on each side , until the characteristic lines have formed.
- Remove them from the heat and then place them on a plate to cool.
- Once they are all grilled, finely chop the cored garlic and mint (or parsley) with a knife and add a few spoonfuls of oil and vinegar according to your taste, finishing with salt.
- Place the warmed courgettes on a plate and pour the marinade over them.
- Mix well and let the aromas blend well for at least 30 minutes/1 hour before serving. Alternatively, place the courgettes inside a container, preferably an airtight glass one, and form a first layer of courgettes by adding part of the marinade, continue in this way until everything is finished.
The cooking variations of the dish
You can prepare this side dish by varying the cooking method, it will then be up to you to decide what you prefer.
- Baked scapece courgettes. Simple, choose when it is possible to turn on the oven in summer. We recommend washing and cutting the courgettes and then cooking them in the oven at 180°C for about 20 minutes , seasoned with a drizzle of oil.
- Recipe with boiled courgettes. In this case, wash and cut the courgettes, then boil the slices in salted water for about 5 minutes .
- Scapece courgettes in the air fryer. Very similar to the preparation in the oven, cook them for about 15 minutes at 180°C, stirring them halfway through cooking and greasing them with a drizzle of oil.
Also try replacing the courgettes with grilled aubergines , you will taste how tasty!
storage
You can store them for about 4-5 days in the fridge , preferably in a container with a special lid. We do not recommend freezing in the freezer.
