Vegan apple cake with Thermomix
With the Thermomix it is possible to make a delicious vegan apple pie, without eggs, milk or butter. Here is our recipe!
Here is the recipe for vegan apple cake with Bimby, a dessert that will not make you regret the traditional preparation and which will allow you to enjoy a healthy and delicious dessert. Perfect for breakfast or a snack, the version we present has nothing to envy of the traditional recipe.
The main ingredients are the same and to this is added extreme simplicity of preparation thanks to the use of the Thermomix (you can use all the models on the market: TM5, TM6 and TM31 ). Let's see all the steps and some ideas for customizing it.

For the apple pie
- Flour 1 – 230 g
- Sugar – 120 g
- Seed oil – 110 ml
- Vegetable milk – 220 ml
- Baking powder – 1 sachet
- Apples – 2
- Organic lemon – 1
- Powdered sugar – to taste
Preparation
How to prepare the vegan apple pie recipe with the Thermomix
Prepare the apples by washing them with plenty of fresh water, peel them and cut them into small pieces, leaving them in water and lemon juice to prevent them from blackening.
In the meantime, pour the sugar into the bowl together with the oil and milk , stirring for 30 seconds. speed 4.
Now add the flour , baking powder and grated lemon zest , blending for 30 seconds. speed 4. When the mixture seems homogeneous, add the apple cubes and let the Thermomix run for 1 min. speed 1 counterclockwise .
Now that the dough is ready, transfer it into a 24cm diameter cake tin that you have greased with oil and floured (alternatively baking paper is fine) and cook at 180°C for 40 minutes. Do the toothpick test before taking out of the oven.
Once cold, decorate as desired with icing sugar .

In addition to the classic recipe for veg apple pie without eggs, butter and milk, there are some really interesting variations , let's talk about apple pie with yogurt without eggs and butter. You can prepare it using the same ingredients, only replacing the milk yogurt in the same quantities. The flavor of yogurt can be apple, but also walnut, almond or vanilla to make it sweeter and spicier.
To make the dessert even tastier, add 2 teaspoons of ground cinnamon or give it a crunchy note by adding a handful of dried fruit . Walnuts, almonds or hazelnuts go great with apples. In all cases we advise you to chop them coarsely.

Conservation
The soft vegan apple cake with Bimby can be kept for about 5 days in a dry place, away from sources of heat or light, covered with a cloth or placed in a special container for desserts. Better to avoid freezing it or placing it in the fridge because it would lose its soft consistency and the typical aroma of apples and sugar.
