Preparing vegan baked cauliflower au gratin is really simple and doesn't require much effort. Boil the cauliflower or, better yet, steam it, prepare a béchamel sauce and then transfer everything to the oven . You can also prepare it in advance and keep it in the fridge until just before sitting down at the table. Easy right? Let's see together the detailed steps to prepare the cauliflower gratin with and without bechamel.

How to prepare the vegan cauliflower gratin recipe

  1. First clean the cauliflower by removing the florets and washing them under running water.
  2. Steam them for about 15 minutes or until they are tender but firm or boil them , always taking care not to overcook them.
  3. While the vegetables are cooking, prepare the sauce you will need to make the cauliflower au gratin with vegan béchamel sauce. Place the oil and flour in a saucepan and cook until it turns hazelnut coloured.
  4. Pour in the sugar-free soya milk, stirring with a whisk to avoid lumps and season with salt and nutmeg .
  5. Let the béchamel cook for 10 minutes after it comes to the boil or until it thickens.
  6. Transfer the cauliflower into a baking dish suitable for cooking in the oven, season it with the béchamel sauce and spread the breadcrumbs on the surface.
  7. Cook in the oven at 200°C for 10 minutes and serve hot.

If, however, you wish to prepare a light baked cauliflower then we advise you to omit the béchamel sauce. Simply, once boiled or steamed, place it in a baking dish suitable for cooking in the oven, season it with a drizzle of oil, salt and pepper and sprinkle it with grated bread and, if desired, some vegan parmesan or nutritional yeast , and au gratin. . The cauliflower au gratin without bechamel is really excellent!

In both cases you can cook the cauliflower in an air fryer . You will get a crispy crust while saving time and electricity.

Conservation

You can keep the cauliflower au gratin in the refrigerator for a couple of days , well covered, both before and after baking. We do not recommend freezing in the freezer.
