Vegan chickpea meatloaf
Chickpea meatloaf is the variant of the classic meat dish but prepared with a base of legumes and potatoes. Here's how to prepare it!
Chickpea meatloaf with the addition of potatoes is the vegetable version of the traditional minced meat-based meatloaf. We will reveal how to obtain a perfect, soft and tasty meatloaf, using legumes , the main protein source of vegetarian and vegan diets.
The secret is to balance all the flavors well and abound with aromatic herbs which will give the dish its characteristic flavour. You can serve it either with a side dish of vegetables or with roasted potatoes. Now we will explain to you step by step how to prepare it!
Ingredients
For the chickpea meatloaf
- Cooked chickpeas – 400 g
- Potatoes – 300 g
- Corn starch – 1 tbsp
- Chickpea flour – 1 tbsp
- Nutritional yeast – 1 tbsp
- Soy sauce – 2 tablespoons
- Sage – 2 leaves
- Rosemary – 1 sprig
- Garlic – 1 clove
- Salt – to taste
- Pepper – to taste
Preparation
How to prepare chickpea meatloaf
First, peel the potatoes , cut them into pieces of about 2 cm and boil them in plenty of salted water for 20 minutes or until they are tender.
Drain the chickpeas from the preserving liquid and transfer them to a blender together with the soy sauce . Blend until you obtain an almost creamy consistency.
Once cooked, mash the potatoes with a fork. Add the chickpea puree and all the aromas: the nutritional yeast (which is not the yeast in a sachet but a deactivated yeast with a cheese aftertaste), the aromatic herbs chopped with a knife together with the garlic , salt and pepper .
Mix everything well then add the corn starch and chickpea flour . You should obtain a slightly sticky mixture but capable of holding its shape. Transfer it to a sheet of baking paper and give it the classic meatloaf shape. Wrap it up and tie the candy ends with string.
Bake in the oven at 200°C for 30 minutes but let it cool for at least half an hour before cutting so that it has time to compact.
If you want, you can also cook diced vegetables such as potatoes, pumpkin, carrots or cauliflower together with the meatloaf. In summer, however, add cherry tomatoes seasoned with oil, garlic and oregano: they will form a delicious sauce.

Conservation
The chickpea meatloaf will keep in the refrigerator for up to 3 days . It is also possible to freeze it, preferably in slices, for a couple of months.
