How to prepare the vegan persimmon cake recipe
- Start by preparing the persimmons by removing the peel, stem and any seeds.
- Pour the pulp into a container and blend with an immersion blender until you obtain a smooth puree. Then add oil and soy milk and mix with a whisk.
- Then sift the two flours and the yeast into a container. Add the liquid part and mix perfectly until you obtain a smooth and homogeneous cream.
- Line a 22-24 cm diameter baking tray with baking paper and pour the mixture. Decorate the surface with sliced almonds and cook at 180°C for approximately 50 minutes or until it is cooked with a toothpick test .
- Leave to cool before serving, decorating as desired with a sprinkling of icing sugar.
Vegan persimmon and chocolate cake
The most common variant of this persimmon cake is the one that involves adding bitter cocoa and chocolate chips to the dough. In this case, reduce the quantity of flour to 230 g, replacing it with 20 grams of bitter cocoa . Then add 100 g of dark chocolate flakes (or chocolate chips) to the finished mixture. You will get an amazing and 100% vegetable dessert.
Conservation
The vegan persimmon cake can be kept for a few days , the important thing is to leave it in a cool and dry place, preferably under the special bell for cakes.
