Who said that vegetable dishes aren't tasty and delicious? Today we are preparing vegan stuffed artichokes, a perfect side dish to serve for a family lunch or dinner. Preparing them is simpler than you might imagine. As always when talking about recipes with artichokes, the most difficult step is cleaning.

For the rest, once the ingredients of the filling have been mixed together, proceed with cooking in the oven (or the similar in an air fryer). As always, ours is a recipe that lends itself well to various modifications. For example, you can make them tastier by adding capers or enrich them with chopped dried fruit.

How to prepare vegan stuffed artichokes

First you need to clean the artichokes by removing the stem, the outermost leaves and the tips of the remaining ones. With the help of a teaspoon, make sure you also remove the central beard. As they are ready, transfer them to a bowl filled with water acidulated with lemon juice.

Fill a pan with water, salt it and, once it reaches the boil, cook the artichokes for 15 minutes.

In the meantime, in a bowl mix the breadcrumbs , the chopped parsley together with the garlic, salt , pepper andnutritional yeast (a flavoring used in vegetable cooking which resembles cheese in taste). Then add enough oil to moisten the mixture.

Drain the artichokes and, once warm, fill them with the mixture, making sure to distribute it well between the leaves. Once this is done, place them on an oiled baking tray and cook them in the oven at 180°C for 25 minutes . Let them cool before serving.

As mentioned, the filling can be customized and enriched as desired. Try it for example with chopped capers and dried tomatoes , perhaps adding some oregano to give the dish a Mediterranean note.

Conservation

Vegan stuffed artichokes will keep for a couple of days in the refrigerator. You can reheat them either in the oven or in the air fryer.
