Pasta all'ortolana is a first course from Campania made with a mix of flavors and aromas directly from the garden . The vegan recipe includes a wide choice of vegetables which mainly include aubergines, courgettes, peppers and tomatoes together with the chosen aromas. The addition of additional vegetables will also be welcome based on your tastes and the period in which you decide to prepare this pasta with mixed vegetables.

Good to eat hot certainly, but cold will also have its charm: perfect for dinners and light lunches , or to take to the office for a tasty break that will fit into your diet.

Preparation of the vegetable pasta recipe

  1. Wash, clean and cut the aubergine, courgette, peppers and tomatoes into pieces .
  2. Brown a clove of garlic in a non-stick pan with three turns of oil.
  3. When the garlic is golden, add the aubergines and let fry for two minutes .
  4. Add the cherry tomatoes and cook these too for two minutes . When they have softened, gently mash them with a ladle to create the sauce.
  5. Add courgettes and peppers and a few basil leaves, and mix, leaving to cook for 5 minutes , adding a few ladles of water if the mixture has dried out.
  6. Bring the salted water to the boil in a pan and cook the fusilli al dente .
  7. Finish cooking them in the pan for two minutes, adding salt and pepper.
  8. Bring the hot vegetable pasta to the table with a few fresh basil leaves!

Variations and advice for the Campania first course

  • You can also add celery, carrots, onion and possibly chilli pepper to your vegetables to give a spicy note to the dish. Further flavored with the strong flavor of capers and black olives.
  • For a creamier pasta, add some parmesan cheese to the pan at the end of cooking, sautéing it for a few minutes over low heat. And here is a perfect vegetarian recipe.
  • The choice of fusulli is optional, rigatoni, penne or farfalle will also pair well, as long as they stay cooked well.

Store the ortolana pasta in the fridge for a maximum of two days . You can then eat it reheated or even better cold!
