Today we are preparing a wonderful recipe , perfect to bring to the table to cheer up the holidays and to tempt your guests… to tempt them: savory vol au vents, a selection of typical Christmas appetizers. These are puff pastry baskets that can be filled in many ways, hot or cold according to need and season.

Among the most famous, there are those with a very tasty filling of cheese fondue , but those with mushrooms, salmon or shrimp are also excellent. In short, whether you decide to prepare the baskets at home or opt for ready-made ones, the filling will make the difference!

How to prepare vol au vents

First of all, take the roll of puff pastry , roll it out delicately without breaking it and then cut out some disks with a diameter of at least 5-6 cm .

For this, leave 1/3 of the disks intact while in the others, with a smaller pastry cutter, make a central hole to obtain a ring. These will be the parts to compose your vol-au-vents: the disks will be the base and above each one you will have to place three rings, which will form the walls.

Once you have created all the baskets, you will have to assemble them by brushing a little milk between the layers to make the pieces of dough stick together. Prick the base with a toothpick and cook them in the oven at 180°C for 12 minutes until they are puffy and golden. Stuff them only when they have completely cooled.

How to fill stuffed vol au vents

Just like savory pies, these puff pastry baskets are also suitable for accommodating the most varied fillings. If you are looking for a hot variant you can for example try your hand at voulevant with fondue . With their creamy and stringy filling they are perfect during the cold season.

Alternatively, for the Christmas Eve, Christmas or New Year's Eve menu we recommend you opt for something fresher and more refined. We are talking about salmon or tuna voulevants . The idea of ​​putting a teaspoon of shrimp cocktail in each basket is also excellent.

Conservation

Empty voulauvents will keep for 3-4 days in a plastic bag. Fillings, on the other hand, are best consumed at the moment so that the pasta does not become soft from the filling and the filling does not risk losing its quality.
