The water cake is a dessert without butter and eggs that maintains an enviable taste and softness, even without ingredients of animal origin!

The water cake is a really simple recipe: without butter and eggs, it is suitable for those who are lactose intolerant , for those who are more attentive to their figure but also and above all for those who follow a vegan diet .

If you combine this with the fact that very little is needed to personalize it , you will discover the reason for the success of the dessert. The choice is yours whether to opt for lemon or orange zest, for classic vanilla or use those vials of aromas that you have in the pantry and just don't know how to use. To serve it, all you need is a sprinkling of icing sugar . Ready?

Preparation

In a bowl, start combining the liquids: mix the seed oil and the water at room temperature.

Grate the lemon zest and squeeze the juice into the bowl.

Add the sugar and, stirring constantly, also the flour sifted with the yeast .

Pour the mixture into a 24cm diameter springform pan lined with baking paper and bake at 180°C for 50 minutes . The long cooking times are dictated by the eggless dough but don't worry: with the toothpick test you can't go wrong.

Remove from the oven and let the cake cool completely before removing it from the mold and serving it, decorating with a sprinkling of icing sugar .

We also leave you a short video with all the steps to make it. You will notice some differences between the proportions of the ingredients but this dessert easily lends itself to these variations while remaining perfect.

    In a similar way you can make a delicious water donut , perfect for breakfast , or let yourself be tempted by the cocoa variant . You can also add chocolate chips (in this case flavor the dough with vanilla) or, for a more rustic flavour, replace 70 g of flour with wholemeal, oat or buckwheat flour . The lazy ones will then be able to rely on the water cake recipe with the Thermomix .

    Conservation

    The recipe for the water cake, as you have seen, does not contain fresh and easily perishable ingredients, which is why it can be kept in a cake container for up to 5 days. If you want to make it last longer we recommend storing it in special containers with an airtight seal and freezing it for a couple of months.
