What a surprise, the cherry plum cake!

Soft, fragrant and light, cherry plum cake is perfect for breakfast or a snack. Let's discover the recipe to prepare it.

At first glance, cherry plumcake looks like a normal breakfast cake . Of course, its scent invades the house after the first few minutes of cooking, but it is when cut that the cherries inside are revealed. Their sweet flavor and almost creamy consistency blend perfectly with the dough, giving life to an easy, quick but at the same time amazing dessert.

As with all these recipes, the preparation is quite simple and does not require much effort. It will take about ten minutes for your dough to be ready to be baked. You can also prepare it with the Thermomix (you can find all the instructions below), to further speed up operations. The bulk of the work, unfortunately, is actually pitting the cherries. But let's now see how to prepare this soft plum cake!

How to prepare the cherry plum cake recipe

  1. First wash the cherries and remove the stone and stem.
  2. To avoid that once inserted into the dough they all end up on the bottom, sprinkle them with a spoonful of flour (about 50 g) taken from the total, making sure that they are covered.
  3. Beat the eggs with the sugar until they are light and fluffy.
  4. Add the oil and yogurt and let them absorb.
  5. Sift the flour and yeast and add them to the dough together with a pinch of salt, mixing well with the kitchen whisk so as to avoid lumps remaining.
  6. Pour part of the mixture into a plumcake mold (ours is 25Ă—10 cm ) lined with baking paper or well buttered and floured.
  7. Then add some floured cherries and proceed by layering until the ingredients are finished.
  8. Finish with a final layer of floured cherries and proceed with cooking
  9. Cook at 180°C for 35-40 minutes. The baking of the plum cake is generally longer than that of traditional cakes so always do the toothpick test before taking it out of the oven. If it comes out moist, continue cooking for another 5 minutes and repeat the test .
  10. Once it has cooled completely you can remove the plum cake from the mold and serve it.

Cherry plumcake with the Thermomix

  1. First wash the cherries , remove the stone and stem and then flour them with a spoonful of flour taken from the total.
  2. Break the eggs into the Thermomix bowl and add the sugar : 5 min. speed 3.
  3. Add the yogurt and oil and then the flour sifted with starch : 1 min. speed 4.
  4. Also add the yeast : 1 min. speed 4.
  5. Now all that remains is to add the floured cherries : speed. 1 Counterclockwise 30 sec.
  6. Pour the mixture into a buttered and floured (or lined with baking paper) plumcake mold of approximately 25Ă—10 cm.
  7. Cook at 180°C for 35-40 minutes, testing with a toothpick before removing from the oven.

storage

Given the presence of fresh fruit in the dough, the cherry plumcake should be consumed rather quickly (a couple of days maximum) or stored in the refrigerator . In this way it can be kept for up to 3-4 days.
