There's nothing better than a fresh dessert to end a meal. Here is the recipe for cold Nutella cake without isinglass.

Summer is the perfect season to eat Nutella because with the warmer ambient temperatures it acquires a unique creaminess. Of course, if you don't want to eat it all directly from the jar then you can look for some simple recipes, perhaps without cooking , that feature it as the protagonist. We thought of the cold Nutella cake, a sort of cheesecake without isinglass (sometimes known as mousse cake ), prepared with just a few ingredients and perfect for any occasion.

The cold Nutella cake in fact consists of a base of blended biscuits and butter and a generous layer of cream and Nutella . The dessert is completed by a shower of dark chocolate flakes, perfect for balancing the sweetness of the cake. Let's see together how to make this quick and easy dessert!

How to prepare the cold Nutella cake recipe

  1. First, crush the biscuits into powder. You can blend them in a food processor or crush them with a rolling pin or a meat tenderizer after placing them in a freezing bag.
  2. Transfer them to a bowl and add the melted butter in a bain-marie.
  3. Mix well and pour the resulting mixture, which has a consistency similar to that of wet sand, onto the bottom of an 18cm diameter springform pan . We recommend lining the base with baking paper so as to remove the cake more easily.
  4. Transfer to the refrigerator for 30 minutes. Also put the dark chocolate in the fridge.
  5. Using an electric whisk, whip the cream well and then add the mascarpone (or spreadable cheese).
  6. Incorporate the Nutella with delicate movements from bottom to top. If it is too hard you can put the jar in the microwave without the cap for about ten seconds.
  7. Pour the cream obtained onto the now cold base, leveling the surface well.
  8. Transfer to the freezer for 5 hours.
  9. Grate or flake the dark chocolate and spread it over the surface.

Your cold Nutella cake is ready to be served. Remember to take it out of the refrigerator about ten minutes before serving it.
