Pumpkin soup with garlic croutons: a genuine dish full of flavour. Here's how to prepare it, even with the Thermomix!

Pumpkin soup with croutons is a very simple dish to prepare. In this preparation, in addition to pumpkin, potatoes are also used, perfect for giving the velouté a creamy consistency.

Below you will find two recipes: the classic one and the one with the thermomix!

Preparation of creamy pumpkin soup with croutons

  1. To prepare the pumpkin puree, start by peeling the pumpkin, cut the pulp into cubes, then peel the potatoes and cut them into cubes too. Peel the onion and slice it thinly. Transfer the onion into a large pan and brown with a drizzle of olive oil.
  2. Add the pumpkin and potatoes, mix and leave to flavor for a few minutes, then add the vegetable broth to cover the vegetables, add salt to taste, then close the lid and cook for 30 minutes .
  3. Once the cooking time has elapsed, blend with the immersion blender to obtain a homogeneous mixture. Set aside for the moment and in the meantime prepare the croutons.
  4. Cut the bread into cubes or slices depending on the bread you decide to use, place a pan on the heat and when the bottom is hot, add the bread and the crushed poached garlic.
  5. Sauté the bread so that it becomes nice and colourful, then serve the hot pumpkin puree, add the croutons and finish with a sprinkling of thyme. Enjoy your meal!

Preparation of pumpkin soup with Thermomix

If you prefer, you can prepare the pumpkin soup with the Thermomix : insert the chopped onion and the oil into the Thermomix jug, then turn on speed 4 at 100°C for 3 minutes.

Add the pumpkin and chopped potatoes, blend quickly at turbo speed, then add the broth and cook for 20 minutes at speed 1 at 100°C. Once cooked, season with salt and prepare the croutons as previously indicated.

This is a version, otherwise you can try the original pumpkin soup recipe !

Conservation

This recipe will keep for about 2-3 days in the refrigerator, inside a container with an airtight lid. The croutons can also be kept for the same amount of time in a cool, dry place away from heat sources (better than in a special food bag). We do not recommend freezing both in the freezer.
