Zucchini meatballs in the air fryer
Air fryer courgette meatballs are easy to make, crispy on the outside and soft on the inside.
Preparing zucchini meatballs in the air fryer is very simple. Like the original recipe, it is necessary to create a dough based on ricotta and courgettes, which must be added grated , to distribute them evenly in the dough. Once shaped, you can proceed with breading, then wrapping them in breadcrumbs. What changes is the cooking, because with air cooking these little nuggets cook evenly and perfectly. The result is meatballs with a soft and genuine filling and an extremely crunchy and tasty exterior , for a crunchy effect. Delicious to serve as a second course, if the small fairies can also be an excellent aperitif, to be accompanied with your favorite sauces.
Preparing courgette meatballs in the air fryer
- To begin, wash the courgettes under running water and dry them.
- Cut the two ends and grate the entire vegetable, using a grater with large holes .
- Transfer the product into a large bowl and add the egg and a pinch of salt; then, mix.
- At this point, you can also add the ricotta (after having drained it of its whey).
- Also add the grated cheese, a pinch of pepper and the oil. Stir vigorously with a spoon to mix everything well.
- In another container, pour the breadcrumbs and proceed with the breading.
- Take some dough and shape it to form a meatball. Roll it in the breadcrumbs and press well to make it stick .
- Continue in this way until all the dough is used up.
- As they are ready, place them in the air fryer basket, spacing them apart.
- Cook the meatballs at 180°C for 14-15 minutes, turning them halfway through cooking.

The courgette and ricotta meatballs, cooked in the airfryer, are good and nutritious, with their crunchy effect coating they are truly irresistible. You can store them in the fridge for 2 days , in an airtight container.
