If you don’t want to leave the potatoes to soak, try boiling them in boiling water for 20 minutes before browning them. Alternatively, add the water a little at a time directly into the pan where you will cook the potatoes with a drizzle of oil. Proceed for about 20 minutes and then turn off the heat, add salt and saffron, and mix until the crispy potatoes are well flavored.
Add a shallot when cooking potatoes in the pan if you like a more intense flavor. Then use the spices you prefer: chives, oregano, sage, thyme or paprika. Try to enrich this side dish with peppers!
