How to prepare the recipe for stracchino and rocket risotto
- First, finely chop the shallot and brown it in a pan with the oil.
- When it is tender, add the rice and toast it for a couple of minutes before blending with the white wine.
- As soon as you no longer smell alcohol rising from the pan, start cooking by covering the rice flush with the boiling broth. It will take around 16-18 minutes depending on the variety of rice used.
- Bring it to cooking adding boiling broth a little at a time and adjusting salt if necessary.
- Two minutes before removing the rice from the heat, add the stracchino and coarsely chopped rocket with a knife.
- Serve piping hot, completing as desired with a sprinkling of grated Parmesan cheese.
Stracchino and rocket risotto: tasty variations
To give the dish a crunchy note, prepare the stracchino and rocket and pine nuts risotto by adding the toasted pine nuts in the pan once the rice has been distributed on the plates.
