Today we offer you a typical Neapolitan recipe in a gluten-free version: gluten-free mozzarella in a carriage. It is prepared by making a sort of sandwich with sandwich bread and sliced mozzarella: the sandwiches are then dipped in egg and bread before cooking. But making this delicious appetizer also suitable for coeliacs isn't difficult: check that the packaging bears the specific indication "gluten-free" or the crossed-out wheat plug symbol.

Preparation of gluten-free mozzarella in carrozza
- Take the mozzarella stick, pat it dry with kitchen paper then cut it into thin slices.
- Place the mozzarella between two slices of sandwich bread .
- Separately, beat the eggs with the milk.
- Dip the slices of bread and mozzarella first in the beaten eggs and then in the flour for gluten-free polenta. Make the flour adhere well to the mozzarella, then pass the mozzarella again in the egg and then in the flour .
- Place the breaded mozzarella on a baking tray lined with baking paper and bake in a preheated oven at 180°C for 15/20 minutes or just enough so that they are golden brown. Alternatively, fry in boiling oil until you get the desired gilding!
