Preparing the recipe for the baked artichoke omelette

  1. Wash and clean the artichokes carefully; cut the stems and the outermost and hardest parts, and then also cut the top part.
  2. At this point, cut them in half and remove the beard at the base. Then, cut them into slices .
  3. Place the artichoke slices in a large pan, add the oil, parsley and a clove of garlic.
  4. Cook over high heat for 10 minutes ; when finished, let them cool.
  5. In the meantime, shell the eggs in a bowl. Add the grated Parmesan and season with salt.
  6. Mix to obtain a homogeneous and fairly dense batter.
  7. Take a baking dish to cook the omelette and, on its bottom, arrange the artichoke slices in a radial pattern .
  8. Cover them with the dough and move on to cooking.
  9. Cook in a fan oven at 180°C for about 30 minutes . When it is ready, let it cool.
