Baked artichoke omelette
For a nutritious second course, we prepare the baked artichoke omelette, genuine and very good.
The baked artichoke omelette recipe is very easy to make and can be prepared in a short time. It is a genuine second course and also suitable for those who follow a vegetarian diet, because it is made using simple ingredients and vegetables. Once the artichokes have been cleaned, they should be added to a mixture created with simple ingredients: in this mix, their flavor becomes very inviting and it is a pleasure to eat them. Furthermore, cooking in the oven makes this delicious and healthy second course even lighter.
Preparing the recipe for the baked artichoke omelette
- Wash and clean the artichokes carefully; cut the stems and the outermost and hardest parts, and then also cut the top part.
- At this point, cut them in half and remove the beard at the base. Then, cut them into slices .
- Place the artichoke slices in a large pan, add the oil, parsley and a clove of garlic.
- Cook over high heat for 10 minutes ; when finished, let them cool.
- In the meantime, shell the eggs in a bowl. Add the grated Parmesan and season with salt.
- Mix to obtain a homogeneous and fairly dense batter.
- Take a baking dish to cook the omelette and, on its bottom, arrange the artichoke slices in a radial pattern .
- Cover them with the dough and move on to cooking.
- Cook in a fan oven at 180°C for about 30 minutes . When it is ready, let it cool.

The baked artichoke omelette is as good as it is light, suitable for both lunch and dinner. You can keep it for 2 days in the fridge , closed in an airtight container.
