Asparagus pancakes

Preparing the recipe for asparagus pancakes
- Before starting, you must wash and dry the asparagus; then, cut the hardest part of the stem.
- Fill a pan with water, salt it and heat it on the stove.
- Cut the asparagus into pieces and, when the water is hot, immerse them in it. Cook for about 10 minutes, until softened.
- Once finished, drain them and then place them in a bowl. Mash them evenly with a fork.
- Add the grated parmesan and mix.
- In another container, shell the eggs; season with a pinch of salt and pepper and beat them.
- At this point, add the eggs to the asparagus.
- Pour in the breadcrumbs and mix everything vigorously to obtain the most homogeneous mixture.
- Get a non-stick pan and pour plenty of oil into it. Heat it on the stove.
- When the oil is hot, you can take a little dough at a time, giving it the shape of a pancake, using two spoons.
- Place the pancakes in the pan and fry over medium heat.
- Cook for a couple of minutes on each side and, when they are golden brown, you can turn off the heat.
- Transfer them to a tray covered with absorbent paper and leave to cool before serving.
Variation for pancakes with light asparagus
If you are not a fan of frying, or you like to follow a lighter preparation, you can try another type of cooking. Get a large pan with a non-stick bottom to pour a little oil into it. Pour in 3 tablespoons of oil and begin to heat the pan. You can add the pancakes and cook them for a couple of minutes on each side. They will be light and tasty!

Asparagus fritters are delicious and practical to eat, which you can serve as an appetizer or as a second course for a light and nutritious lunch. If you have leftovers, you can store them for 1-2 days in the fridge , in an airtight container.
