How to prepare the recipe for scrambled eggs with tomato
- First, finely chop the onion and brown it in a pan with oil. Add the garlic clove and a pinch of salt then add the tomato puree.
- Leave to cook for 5 minutes and in the meantime break the eggs into a bowl, add the salt, parmesan and pepper and beat quickly.
- Pour the eggs into the pan and mix so that they mix with the tomato, then leave to cook for about 5 minutes , stirring occasionally, until the eggs have thickened.
- Serve the scrambled eggs with tomato, finishing with a little fresh basil if desired.
