Are you looking for a healthy, simple second course of meat ready in less than half an hour? Scallops with mushrooms are the recipe for you!

In the Italian tradition, scallops with mushrooms are a real must. Omnipresent on the menus of restaurants and trattorias, they are also a perfect dinner saver when you have little time but still want to bring a healthy and tasty dish to the table.

To make them we used, just as tradition dictates, veal slices which we then beat lightly. The mushrooms, on the other hand, are champignons , ideal because, being cultivated, they are found fresh at any time of the year. There are very few other ingredients needed for this recipe and you will certainly already have them in your pantry. Here are our tips for perfect mushroom scallops!

How to prepare the recipe for scallops with mushrooms

  1. First, beat the meat with the meat tenderizer by placing the slices between two sheets of baking paper. You should obtain a thickness of approximately 3 mm.
  2. Then dip them one by one in the flour , pressing to make it stick then shake them to remove the excess.
  3. Then dedicate yourself to cleaning the mushrooms . Remove the final part of the stem, usually earthy, and clean the head with a damp cloth. Then cut them into slices and keep them aside.
  4. In a pan, melt half the butter with the oil. Then brown the meat for 3 minutes on each side , seasoning with salt and pepper. Once ready, move it onto a plate and cover it with a lid.
  5. In the same pan, melt the remaining butter with the garlic clove.
  6. Cook the mushrooms, adding salt and seasoning with parsley, until they are tender. 4-5 minutes will be enough.
  7. Put the slices of meat back in the pan and leave everything to flavor for 5 minutes over a low heat and with the lid on. Then serve hot.

Scallops with mushrooms can be prepared in many ways. Starting from the meat , as in the case of chicken and pork escalopes , up to the mushrooms. Our recipe with champignons is certainly the most practical and economical but no one is stopping you from preparing them with porcini mushrooms. Green light also for frozen or dried mushrooms . In this case you will have to hydrate them in water for at least 30 minutes before you can use them.

Conservation

The mushroom scallops will keep in the refrigerator, closed in an airtight container, for a couple of days. Reheat them in a pan or in the microwave before enjoying them.
