Are you vegan but don't want to give up soft and versatile crepes? Here's how to make vegan crêpes, without eggs, milk and butter.

It seems incredible to prepare vegan crêpes without eggs and cow's milk , yet we can assure you that it can, of course! Indeed, the crepes we prepare today are not only very good but also lighter and therefore perfect even for those who pay particular attention to their figure.

The preparation is very simple and the result will leave you satisfied: as you can see the dough is neutral , you can then use the crêpes as a base for desserts, filling them with jams or creams of various types, or as a base for savory dishes. In this case, make sure you use a vegetable drink without added sugar .

How to prepare the vegan crêpes recipe

  1. Start pouring the 00 flour into a bowl. Add the turmeric and a pinch of salt (also for the sweet version) and mix everything quickly.
  2. Pour in the milk slowly, mixing with a hand whisk until you obtain a smooth and homogeneous batter.
  3. Cover the bowl with cling film and leave to rest in the refrigerator for at least 30 minutes (maximum 12 hours).
  4. Heat a non-stick pan , or a crepe maker, and spread it with a very light film of seed oil. Avoid extra virgin olive oil which has too intense a flavour.
  5. Pour a ladle of batter for each crêpes, and cook on both sides, being careful not to burn them. If you use a smaller pan (20 cm diameter) then half a ladle will be enough.
  6. Turn it over as soon as the edges begin to lift . Continue cooking on the other side and then, as they are ready, place them one on top of the other on a plate.

Variants

If you prefer a vegan and gluten-free version, we recommend trying the crêpes with chickpea flour . In any case, this recipe can also be prepared with other types of flour such as wholemeal, kamut or spelled.

For an even lighter version, replace the vegetable drink with water. Trust me, water crêpes have nothing to envy of the originals.

How to fill sweet vegan crêpes

The simplest version is inspired by a classic of French cuisine, crêpes au sucre . To prepare them, simply distribute a little granulated sugar (1 teaspoon) on each crêpes while it is still in the pan. Roll up and serve for a simple but tasty snack.

Alternatively, you can opt for homemade jams or marmalades (we recommend those without sugar ), or choose something more enjoyable such as hazelnut or peanut butter , excellent with chopped hazelnuts and sliced ​​bananas.

How to fill savory vegan crêpes

Like the more traditional versions, vegan crepes are excellent for hosting savory fillings. This way you will obtain refined dishes that are also perfect for special occasions. The essential ingredient in this case is the vegan béchamel sauce to which you can add sautéed mushrooms or other sautéed vegetables.

Conservation

The crêpe batter will keep in the fridge for 12 hours so you can prepare it in the evening for the morning. Cooked crepes, on the other hand, can be kept in the refrigerator for 2 days, well covered with cling film, but it is also possible to freeze them by placing sheets of baking paper cut to size between them.
