How to prepare the pear strudel recipe

  1. First, peel the pears, remove the core and cut them into not too large pieces . Combine them in a bowl together with the sugar and chocolate chips and mix.
  2. Unroll the rectangular puff pastry keeping the baking paper and crumble the dry biscuits in the centre, along almost the entire length. These will serve to absorb the liquid released by the pears.
  3. Distribute the pears with the chocolate chips over the biscuits (don't worry if they seem like too many, they will lose a lot of volume during cooking) and close tightly. We advise you to turn the strudel so that the closure is facing downwards.
  4. Cook at 190°C for 35 minutes then leave to cool before serving with a sprinkling of icing sugar.

Pear strudel with shortcrust pastry

The procedure for preparing the filling is the same. The only difference is the outer casing and for this you will need:

  • 250 g of 00 flour
  • 150 g of cold butter
  • 100 g of sugar
  • 2 egg yolks
  • 1 sachet of vanillin

Combine the flour, sugar and vanilla in a bowl and give a quick mix. Then add the cold butter cut into cubes and mix with your fingertips until you obtain a crumbled mixture . At this point, add the egg yolks and finish kneading, forming a dough that you will leave to rest in the refrigerator for an hour. Roll it out between two sheets of baking paper until it reaches half a centimeter thick and trying to obtain a rectangular shape. Then fill it as per the recipe, first with the crumbled biscuits and then with the pears, and close by turning the closure downwards. Cook at 190°C for 40 minutes and serve with icing sugar once lukewarm.
