Anchovies in oil

Homemade anchovies in oil are easy and delicious, practical to keep in the pantry and, if necessary, flavor your dishes.

We are used to buying anchovies (or anchovies) in oil directly in the jar, ready to use. Yet if you have quality raw materials available (easy if you live near the sea), our advice is to try your hand at preparing homemade anchovies in oil.

For the record we must tell you that it takes some time before you can taste them but at the first taste you will forget about the effort made. Our word! The first step consists in putting the anchovies in salt , then after a rest period of at least days they will be preserved in oil. But let's see everything in detail.

Ingredients

For the anchovies in oil

  • Anchovies – 1 kg
  • Coarse salt – 500 g
  • Wine vinegar – to taste
  • Seed oil – to taste
  • Extra virgin olive oil – to taste

Preparation

How to prepare the recipe for anchovies in oil

First you will have to clean the anchovies by removing the head and pulling upwards so as to also remove the soft parts.

If you have purified sea water, use it to rinse, otherwise skip the step. Get a glass container and spread a layer of coarse salt on the bottom. Start arranging the anchovies alternating head and tail so as to fill all the spaces. Once the first layer is done, cover with salt and continue. Stop with the layer of fish 2 cm from the edge and cover with salt.

Place a saucer the size of which is inside the hole and place a weight. Let the anchovies rest for at least 15 days before continuing with the recipe.

Collect the anchovies and remove the skin with the help of a knife. Rinse them in a dish where you have put water and vinegar (or just low quality white wine). Open them in half, remove the bones and place them on a sheet of kitchen paper to dry.

Transfer them into sterilized glass jars and cover with oil. Our advice is to make half olive oil and half seed oil but you can also use just one. Close with a cap and store in the pantry for at least 15 days before using them .

The first part of the procedure, as you may have noticed, is the same as for salted anchovies . For this reason you can also make the preserve using an already salted product as long as it is of good quality. This way you will shorten preparation times.

Conservation

Anchovies in oil can be stored in the pantry for over a year. The important thing is that the fillets are always immersed in oil.
