Preparing the recipe for sugar-free orange marmalade

  1. First , peel the oranges, removing as much of the white part present even between the segments as possible.
  2. Wash the apples and cut them in half, removing the core, the seeds and keeping the peel, then cut them into pieces.
  3. Pour the fruit into the pan and add the lemon juice and cinnamon (optional).
  4. Turn on the heat and leave to cook for approximately 45 minutes or until the mixture reaches 108°C.
  5. If you want a more homogeneous consistency we recommend blending everything with the immersion blender.
  6. When it has reached an optimal level of density, test the saucer . If you are not satisfied, you can add some water and bring it to the boil again.
  7. When you have obtained the desired result, pour the still boiling sugar-free bitter orange marmalade into the sterilized jars .
  8. Close the jars hermetically and turn them upside down, in this way the lids will also be sterilized.
  9. Leave the jam to rest for at least 2 days before eating it.

For an even more intense flavour , choose organic jams whose peel is untreated. Remove the zest with a fine grater and add it to the fruit so as to enrich the jam with even more essential oils.

We really like it without the sugar, so that we can fully enjoy the flavor of the fruit , but you can also prepare it in the classic version with the sweetener.

Conservation

If all the preparation and sterilization steps are carried out perfectly, the jam can be stored for a good two years. It must be stored in a cool, dry place away from sunlight at a temperature below 23°C . Once the jar has been opened, it must be strictly stored in the refrigerator for a maximum of 3 weeks.

When to eat it: pairings

Sugar-free bitter orange marmalade is ideal for a breakfast dedicated to health and well-being, perhaps with a cup of hot milk and biscuits .

Also excellent as a snack, perhaps to accompany the classic margherita cake. You can also fill the tart with this delicious jam and enjoy it with a cup of tea with your friends. Also suitable for dinner to accompany all the fresh or mature cheeses you prefer.

Origin and history of orange marmalade

The birth of jam dates back to the Greeks who used to boil fruit with honey to prolong its preservation. Among the Romans, however, it was popular to immerse the fruit in containers containing cooked must or passito and honey.

Orange marmalade, on the other hand, has a very different story. In fact, it seems that Catherine of Aragon , who married Henry VIII, was nostalgic for the oranges of her land. So they invented this preserve that could be transported and enjoyed even far from home.
