Lemon chicken rolls

Lemon chicken rolls: a second course with a particular taste, very simple to prepare and perfect in every season.

Lemon chicken rolls are a second course of meat with a very particular and fresh taste thanks to the use of lemon juice and zest. If you want to make your sauce creamier we recommend adding a few spoonfuls of cream; the rest will be the flour used to cover the rolls that will make the cooking base thick enough.

We offer them in the most classic version filled with ham and cheese but you can use the cold cuts you prefer and a stringy cheese of your choice.

How to prepare the lemon chicken rolls recipe

To prepare the lemon meat rolls, start by beating the chicken breast slices with the meat mallet to make them slightly thinner. Stuff the slices with ham and provolone then close like a roll.

Secure the meat with toothpicks so as not to let the filling escape during cooking and dip them one by one in the flour .

Place a pan on the heat and melt a knob of butter with the garlic clove, add the rolls and brown on both sides for a few minutes. Pour in the lemon juice, add the zest and broth and start cooking.

Leave to cook over medium-low heat with the lid on for about 20 minutes. Finally, flavor with chives or parsley and serve.

To make the cooking sauce thicker and creamier you can also add 150 ml of fresh cooking cream immediately after the lemon. We also advise you not to use wine to avoid the dish being unbalanced towards an acidic component.

Conservation

The rolls will keep for 2-3 days in the refrigerator. Reheat them in a pan before bringing them to the table.
