Focaccia without yeast
The yeast-free focaccia recipe is really simple and will allow all those intolerant to yeast not to give it up.

How to prepare the focaccia recipe without yeast
In a bowl mix flour , salt and sugar . Then add the water slowly, mixing first with a wooden spoon, then by hand. You can work the dough either by hand, on a lightly floured pastry board, or in a stand mixer.
When it is smooth, cover it with cling film and place it to rest in the refrigerator for 30 minutes . If it feels sticky, don't worry.
Once the resting time has elapsed, divide the dough into two equal parts and with the help of your fingers roll out the focaccias up to a centimeter thick . If possible, do it already on a baking tray lined with baking paper, so you don't have to move it.
Season with a drizzle of oil , a few grains of coarse salt and the rosemary needles (at this stage you can add other condiments such as olives or onions if you like).
According to the traditional version, cook the focaccias without yeast in the oven at 200°C for 15 minutes . However, keep in mind that every oven is different so times may vary slightly.
Do you want to prepare yeast-free focaccia in a pan? No problem: cook it for 20 minutes in a non-stick pan, turning it occasionally. Only during the last 5 minutes of cooking add oil, salt and rosemary to the surface.

Conservation
Store the focaccia in a dry place for about 2 days (beyond which it will tend to become hard and dry), taking care to place it inside a bread bag or in an airtight container. You can also freeze it: we recommend dividing it into individual portions to defrost and reheat if necessary.
