Carnival tagliatelle

Sweet Carnival tagliatelle are typical of Emilia Romagna. Here's how to prepare them fried, but also in the lighter baked version.

When we talk about Carnival desserts, it is impossible not to think of something fried and in fact Carnival tagliatelle are also fried. This typical dessert from Emilia Romagna is prepared with a dough very similar to that of tagliatelle, sometimes enriched with sugar and liqueur, sometimes left simple.

The pastry, after being rolled out, is sprinkled with icing sugar and flavorings (generally orange zest), rolled up and cut into slices. Once fried, these rounds of pasta are transformed into sweet Carnival tagliatelle. If you've never tried them, you really don't know what you're missing: the goodness of a traditional recipe that combines with the carnival cooking par excellence could not fail to yield something delicious like sweet fried tagliatelle.

Ingredients

For the pasta

  • Flour 00 – 200 g
  • Eggs – 2

For flavouring

  • Organic Orange – 1
  • Powdered sugar – 50 g

For frying

  • Seed oil – to taste

Preparation

How to prepare the recipe for fried Carnival tagliatelle

Start by placing the flour in a bowl. Add the eggs and start kneading by hand, just as you usually do with fresh pasta. Once you have obtained a smooth and homogeneous dough (it will take about ten minutes), leave it to rest under an inverted bowl for at least 30 minutes.

Now roll out the pastry until it reaches a thickness of 1-2 mm (you can also help yourself with the appropriate machine, in this case stop at the penultimate notch).

Spread the icing sugar over the entire pastry, leaving a centimeter of free edge all around. Then flavor with grated orange zest . Roll the dough and let it rest for another half hour.

At this point all you have to do is cut out slices about a centimeter thick using a sharp knife.

Fry them a few at a time in boiling oil at 170°C until they are golden and crispy, then drain them with a slotted spoon and place them on a sheet of absorbent paper before serving.

Some recipes include the addition of a spoonful of rum or grappa to the dough. The choice is yours!

Baked sweet tagliatelle

If tradition has no place in your diet, but you don't want to give up this Carnival recipe, you can cook the sweet tagliatelle in the oven. The result will not be the same as the original, but you will still find all the flavors of the traditional dessert.

In this case, proceed as per the recipe and then, once you have obtained the rounds, place them on a baking tray lined with baking paper, unrolling them slightly.

Cook them at 180°C for 20-25 minutes until they are golden brown. Due to the baking, the result will be slightly drier than the fried version.

Conservation

Carnival sweet tagliatelle are good freshly made . They can be kept for a maximum of a couple of days but will still tend to lose their crunchiness .
