For the artichoke omelette
- Artichokes – 4
- Eggs – 6
- Grated Parmesan – 50 g
- Onion – 1/2
- Extra virgin olive oil – 2 tablespoons

- Lemon – 1

- Raw ham – 8 slices
Preparation

To prepare your artichoke omelette with figs and raw ham, first clean the artichokes by removing the external leaves, part of the stem, the tips and the beard. Then cut them into thin slices and immediately immerse them in water and lemon juice.
Finely slice half an onion and brown it in a large pan with a few turns of oil . Add the artichokes and continue cooking for 15 minutes , until they are tender. If necessary, help yourself with a little water. Season with salt and pepper .
Beat the eggs in a bowl with a little salt and a handful of grated parmesan .
When the artichokes are soft, pour the beaten eggs over them. Cook the omelette well and, when it begins to thicken on the surface, turn it over with the help of a plate or lid.
Cut the omelette into cubes, place half a slice of raw ham, a quarter of a fig on each and secure everything with a toothpick.
If you like, you can accompany your omelette with slices of bruschetta bread or with homemade taralli .
Conservation
We recommend consuming your omelette immediately, decorated with lots of raw ham and figs. However, we do not recommend storing it in the fridge or freezing it in the freezer.
