Preparing the recipe for artichoke pâté
- The first thing to do is clean the artichokes. Cut the outermost and hardest leaves.
- Remove the stem and top from the vegetables. Then, cut them in half and remove the beard.
- Cut them into pieces and immerse them in a bowl of water acidulated with lemon so that they do not turn black.
- Transfer everything into a pan and boil the contents on the stove for 20 minutes .
- Once finished, drain the vegetables and leave them to cool in a container.
- In the meantime, put the chopped parsley in a blender. Add a clove of garlic (with the soul removed).
- Pour in the olive oil slowly and season with pepper and salt.
- Mix and blend everything, creating a creamy mixture.
- Transfer the product into a bowl, cover with cling film and transfer to the fridge for at least 20 minutes to firm up.
