Preparing the recipe for artichoke pâté

  1. The first thing to do is clean the artichokes. Cut the outermost and hardest leaves.
  2. Remove the stem and top from the vegetables. Then, cut them in half and remove the beard.
  3. Cut them into pieces and immerse them in a bowl of water acidulated with lemon so that they do not turn black.
  4. Transfer everything into a pan and boil the contents on the stove for 20 minutes .
  5. Once finished, drain the vegetables and leave them to cool in a container.
  6. In the meantime, put the chopped parsley in a blender. Add a clove of garlic (with the soul removed).
  7. Pour in the olive oil slowly and season with pepper and salt.
  8. Mix and blend everything, creating a creamy mixture.
  9. Transfer the product into a bowl, cover with cling film and transfer to the fridge for at least 20 minutes to firm up.
