- Dissolve the yeast in the warm water. Pour the bread flour, teff flour and starch into a bowl, add the water with the yeast and start kneading with the mixer or by hand . Then add the oil and salt.
- Knead for about ten minutes to obtain a homogeneous and smooth dough. Cover with cling film or a clean cloth and leave to rise for an hour and a half.
- Once the leavening time has elapsed, place the dough on a floured surface, knead the dough by making two folds inwards three consecutive times, then leave to rise again for 45 minutes .
- Place the dough on a baking tray lined with baking paper and bake in a preheated oven at 240°C for 15 minutes, then lower the temperature to 200°C and bake for another 25-30 minutes.
- Once cooked, remove the bread from the oven and let it cool completely before cutting into slices.
