Duchess potatoes are a simple potato side dish to prepare, decorative, tasty and perfect for making a good impression on your guests. Let's see the recipe!

That of duchess potatoes or dauphine potatoes is a recipe of French origin. It is an elegant side dish to present and simple to prepare: all you need is a little familiarity with the sac-à-poche , which will be used to create the typical "curls" or "tufts" which will turn into your potatoes duchess.

Crunchy on the outside and soft on the inside, these tubers are also rich in substances that help against bad digestion , especially when boiled (as in the case of our recipe).

Preparation of duchess potatoes

  1. To prepare this side dish, you must first boil the potatoes. Immerse them in a pot of cold water with all the peel, after having washed them . Cook them, then drain them and leave them to cool , so as not to burn yourself.
  2. After about ten minutes, peel them and mash them in a bowl with the help of a potato masher .
  3. Add the butter, Parmesan, salt, pepper and nutmeg and mix the ingredients; also incorporate the two egg yolks and continue to mix.
  4. When the compound is homogeneous, fill the sac-à-few with a star nozzle , then line the pan with baking paper and start creating your curls.
  5. Bake at 200°C for 15 minutes , taking care to heat the oven first.

You can savor the tasty crispy baked potato curls with a soft heart together with stewed vegetables, meat or stew.

Preparation of duchess potatoes with the Thermomix

With the Thermomix, the ingredients are the same (but the preparation changes slightly).

  1. Peel and cut the potatoes into small pieces and put them in the Varoma with about 1 liter of water; 20 minutes at 100°C, speed 1 .
  2. Once the potatoes are cooked, mount the butterfly : combine all the ingredients except the eggs in the mixing bowl. 1 min. , speed 3.
  3. Lastly, add the eggs and beat again for 1 min., again at speed 3.
  4. Then proceed with the sac-à-poche and bake for 15 minutes at 200°C .
  5. Once they are golden brown, your duchess potatoes will be ready.

Conservation and advice

You can keep this side dish in the fridge for a couple of days.

To add a pinch of panache to the recipe, try integrating a spice such as curry or chilli pepper. The flavor will be even more interesting!
