Easter scarves

Easter scarcelle: typical and decorated sweets, to be served or given as gifts during the Easter holidays.

As the saying goes, "where you go, customs you find", culinary traditions also vary from area to area. Among the typical desserts of the Easter tradition there are scarcelle of Apulian origin, prepared with a base similar to shortcrust pastry and decorated with a sugar icing and colored balls. Let your imagination run free when it comes to decorations and shapes.

Preparation of Easter biscuits

  1. To prepare the Apulian Easter scarcelle, start by pouring the flour, lemon zest, yeast, sugar and salt onto a work surface.
  2. Create the fountain and pour the egg inside and start beating it with a fork and kneading.
  3. Once the egg is mixed well, slowly add the milk, always mixing with the fork and finally the oil (a little at a time).
  4. Continue kneading with your hands until you obtain a smooth and homogeneous dough which you will continue to knead to combine. You will know that you have obtained the desired result when you obtain a very elastic dough without any lumps.
  5. Cover with a clean cloth and leave to rest for about 30 minutes.
  6. Take the dough again, roll out with a rolling pin and form the scarcella: if you have a bell-shaped mould, use that otherwise make braids like we did (dividing the dough into small cords to work with).
  7. Transfer the scarcelle onto a baking tray lined with baking paper, place 1 egg on top of each braid and bake in a preheated oven at 190°C for 35-40 minutes .
  8. In the meantime, prepare the icing for the final decoration: mix the egg white with the icing sugar and lemon juice.
  9. Remove the scarcelle from the oven and leave to cool slightly before covering with the icing and decorating with the colored and silver balls.
  10. Wait a few minutes so that the icing solidifies, then serve.

storage

These biscuits can be stored in a tin box for 3-4 days . We do not recommend freezing in the freezer.
