It's your free afternoon, you really want to make a dessert, but suddenly you make a bitter discovery: there are no more eggs at home. Do you recognize yourself in this scenario? They really have nothing to envy of the "classic version" and, obviously, they will also be perfect for those who do not eat eggs by choice or due to intolerance.

Some are desserts without eggs and butter and therefore light and perfect even for those on a diet, but there really is something for all palates: for those who prefer tiramisu without eggs, for those who want a very simple donut for breakfast but also… for who could never give up chocolate!

The idea is not to give you suggestions for replacing this ingredient, but to leave you with egg-free dessert recipes that work very well. In short, you will practically never use eggs anymore (and you won't regret them): let's start right away!

1. Eggless chocolate cake recipe

Among the eggless cakes , the chocolate one is undoubtedly the most delicious , which is why we chose it: to start… with a bang! This recipe is a real treat for the palate, while maintaining its lightness . The ingredients are:

  • 280 g of 00 flour
  • 150 g of sugar
  • 50 g of bitter cocoa powder
  • 300 ml of milk
  • 80 ml of seed oil
  • 1 sachet of baking powder

To make it, sift all the dry ingredients into a bowl, then slowly add the oil and milk , working everything together, preferably with an electric whisk or in a planetary mixer. Transfer to a buttered or lined baking tray and bake in a preheated oven at 180°C for 30 minutes .

As you may have noticed in this recipe the eggs are "replaced" by seed oil. Similarly, if you prefer to make desserts without eggs and milk, you can replace the milk with a vegetable drink .

2. Eggless cake recipe with apples

Eggless apple pie

A great classic like apple pie certainly cannot fail to have its egg-free version which is a little lighter and perfect in case of intolerances (or even if you forget to buy them)! To make this cake you will need:

  • 3 apples
  • 230 g of flour
  • 150 g of sugar
  • 200 ml of whole milk
  • 120 ml of seed oil
  • 2 tablespoons lemon juice
  • lemon peel to taste
  • 1 sachet of baking powder
  • 1 sachet of vanillin

We start by cleaning the apples, the longest part of the preparation: once you have washed them and removed the peel and core, you can cut them into cubes. Place them in a bowl with a spoonful of sugar and lemon juice (to prevent them from oxidising ).

Mix the sifted powders and then add oil and milk. Work well and when it is smooth, add the apples. Place in a buttered and floured baking tray and cook for 40 minutes at 180°C or until well cooked.

As you may have noticed, this cake is a cake even without butter!

3. Eggless yogurt cake recipe

Eggless yogurt cake

We now come to a cake without eggs and milk, perfect for breakfast because it is very soft and suitable for dunking in coffee . We're talking about eggless yogurt cake . We will use:

  • 340 g of yogurt (plain or flavored, to taste)
  • 280 g of 00 flour
  • 60 g of potato starch
  • 140 g of sugar
  • 130 ml of seed oil
  • 1 sachet of baking powder
  • icing sugar to taste

The preparation is very simple : start whisking the sugar, seed oil and yogurt; add the sifted dry ingredients, without stopping mixing. Place everything in a well-buttered cake pan. This light cake bakes for approximately 40 minutes in a hot oven at 180°C .

Those intolerant to dairy products will be able to choose a lactose-free or soy yogurt without problems. Likewise, if you prefer a flavored one to the white one it will add aroma to the cake.

If you have the mould, you can also make a yoghurt donut (without eggs and butter) : the dough and procedure are the same, but check it after 30 minutes to see if it is cooked.

4. Eggless biscuit recipe

Butter biscuits

Butter biscuits are excellent quick egg-free desserts: make them small and they will cook in just 10 minutes ! Here are the ingredients needed for this recipe:

  • 175 g of flour
  • 80 g of sugar
  • 50 g of honey
  • 80 g of butter
  • water to taste
  • zest of an untreated orange
  • a teaspoon of baking powder

As often happens when talking about butter, in this preparation the temperature of the ingredients and utensils is very important: they should be very cold. Add flour, yeast, honey, cold butter, sugar and orange zest (or another citrus fruit of your choice ) and finally complete with a couple of spoons of ice water.

Work it with your hands as little as possible and let it rest for an hour in the fridge wrapped in cling film. Then, roll out the dough and give it the shape you want. Cook at 170°C for 10 minutes .

Try them with tea: they will melt in your mouth!

5. How to make muffins without eggs

Eggless blueberry muffins

Our blueberry muffins are a quick and easy but at the same time healthy dessert: they are prepared with brown sugar, wholemeal flour without eggs and butter. Get yourself:

  • 250 g of wholemeal flour
  • 150 g of blueberries
  • 80 g of cane sugar
  • 100 ml of water
  • 50 ml of seed oil
  • vanilla extract or vanillin
  • 1/2 teaspoon baking soda
  • 1 pinch of salt
  • 1 organic lemon

Make a syrup by melting the sugar in the water over a low heat . While this mixture cools, combine the wholemeal flour, pinch of salt, lemon peel and bicarbonate of soda in a separate bowl.

Pour the brown sugar syrup and seed oil over the dry ingredients and mix well. Add the blueberries and mix one last time. Pour the mixture into the appropriate paper or aluminum baking cups (we recommend the latter as they are more solid) and cook at 180°C for about 20 minutes .

6. How to make fruit tiramisu without eggs

Strawberry tiramisu without eggs

A cold dessert, without cooking and perfect especially for the summer months is undoubtedly the strawberry tiramisu which, unlike the traditional version, is without eggs. You will need:

  • 2 packs of ladyfingers
  • 1 glass of milk
  • 300 g of strawberries
  • 150 g of icing sugar
  • 500 ml of very cold whipping cream

Using a planetary mixer, whip the cream with the icing sugar. Cut the strawberries into cubes and you are ready to start. Get a baking dish and make an initial very light layer of cream; continue with a layer of ladyfingers soaked in milk and cover them with half the cream. At this point add the strawberries and repeat a layer of ladyfingers and one of cream. Keep in the fridge until ready to serve.

At other times of the year, replace the strawberries with other seasonal fruit to taste: it will still be delicious!

7. Eggless cream recipe

Egg-free custard

To make excellent desserts without eggs and yeast to be served with a spoon, you can start from a basic preparation such as apple custard . We will use vegan friendly ingredients but, if you don't have this type of need, feel free to use traditional cream and milk:

  • 300 g of soy milk
  • 20 g of corn starch
  • 100 g of agave syrup
  • 50 g of rice cream
  • 1 apple
  • 1 lemon

In a pan, heat the milk and cream. Add the apples in small pieces and cook for 15 minutes (or until they are tender and broken down). Add the corn starch dissolved in a drop of milk and the lemon zest and blend everything with the immersion blender. Put everything back on the heat until it thickens and, finally, add the agave syrup .

Use this cream as a base to fill tarts or cakes as you like but also to make delicious cups by adding fruit and crumbled biscuits. As you have seen, the magic ingredient of this recipe, which will not make you miss eggs, is the apple !

8. How to make sweet crepes without eggs

Crepes without eggs

Do you want to make a quick egg-free dessert that lends itself to many different fillings ? But then you are undoubtedly looking for the recipe for egg-free crepes . To the traditional French version (for those who don't know, the traditional crepe dough is neutral, neither sweet nor salty) we added a little sugar; there are only four ingredients:

  • 300 ml of whole milk
  • 150 g of 00 flour
  • 100 g of sugar
  • 60 ml of seed oil

Sift the flour and add the oil and sugar; mix with a whisk and finally add the milk. Leave to rest in the fridge for half an hour and then ladle the batter into a pan (greased with a drizzle of oil). Cook the crepes over low heat for about 1 and a half minutes per side and fill as desired.

9. Eggless ice cream recipe

Vegan chocolate ice cream

To be enjoyed on a stick or in cups , egg-free chocolate ice cream is truly suitable for everyone because it is prepared without the addition of animal proteins (eggs or milk). Even if you don't have an ice cream maker, let's see the necessary ingredients:

  • 500 ml of rice milk
  • 100 g of sugar
  • 200 g of dark chocolate
  • 30 g of bitter cocoa
  • 250 ml of vegetable cream
  • chopped almonds to taste

Melt the sugar in the vegetable milk, setting the stove to a low heat. Remove from the heat and add the chopped chocolate and sifted cocoa powder . While this mixture cools (first at room temperature and then in the fridge), whip the cream; combine the two mixtures, continuing to whisk.

Leave the mixture in the freezer for an hour, mix it well and then insert it into the appropriate moulds . Keep in the freezer for at least 3 hours and decorate as desired with melted chocolate and chopped hazelnuts before serving.

10. How to make coffee cream

Coffee cream

We conclude with a delicious cold coffee cream : a recipe which, unlike custard, does not have eggs. You have to have a little patience regarding the cooling times , but there are only three ingredients:

  • 100 ml of espresso coffee
  • 250 ml of cream
  • 4 tablespoons of icing sugar

Start making the classic espresso and let it cool after sweetening it with half the dose of icing sugar. Whip the cream with the rest of the sugar and add the two mixtures.

Place everything in the freezer in a tray and let it rest for at least a couple of hours . Then, work it with the whisks so that it is nice and frothy and serve it; if, however, it becomes too hard, blend it in a blender before enjoying it.
