How to prepare grilled courgettes in oil, the summer recipe
- First wash the courgettes , remove the ends and cut them into 3 mm thick rounds . You can also opt for other cuts, such as stick cuts: the important thing is not to exceed the dimensions.
- Heat a grill pan , preferably cast iron, and cook the courgettes for a couple of minutes on each side, until the characteristic lines have formed.
- As they are ready , place them on a plate and season them with a pinch of salt .
- While the courgettes cool, wash the mint and break it into pieces with your hands, then cut the garlic into slices.
- Distribute the courgettes in the sterilized jars, forming layers and flavoring each with garlic and mint.
- From time to time cover them with oil to make sure it penetrates well between the layers.
- You will have to fill the sterilized jar until it reaches one centimeter from the edge .
- Cover with oil, simply place it on top of the cap (we remind you that the caps must be new , not recycled) without closing and let it rest for a couple of hours .
- After this period of time, check the oil level and if it has dropped, top it up.
- Close with the new cap, place in the pantry and let the courgettes rest in oil for at least a month before consuming them .
We love enjoying this preserve on slices of toasted bread : simplicity always wins! Furthermore, keep in mind that mint can be replaced with parsley or basil and if you love spiciness, a few pieces of chilli pepper will give your preserve an extra boost.

Grilled courgettes in oil can be stored in the pantry for up to a year. Once opened, they should be placed in the refrigerator and consumed within about ten days. Also, make sure they are always covered in oil.
