Preparation of couscous with broccoli and sesame sauce

  1. Pour the couscous into a bowl and add just enough of the boiling vegetable broth.
  2. Add a tablespoon of extra virgin olive oil to the broth and couscous and wait for the couscous to swell, absorbing the water and oil ( about 20 minutes ).
  3. After the necessary time, gently shell the couscous, stirring with a spoon.
  4. Clean the broccoli, cutting the tops and throwing away the stem.
  5. Boil the broccoli tops in salted water for a few minutes, then drain and sauté them in a pan with oil, garlic and fresh chilli.
  6. Season with salt and season the broccoli in these ingredients.
  7. Prepare the sesame sauce. In a non- stick pan , toast the sesame seeds, then let them cool and mix them together with very little salt and sesame or sunflower oil, until you get a sauce. If you want, you can also buy it directly in ethnic shops.
  8. Mix the couscous with the broccoli and garnish with the sauce and some seeds to complete.
  9. If you want you can also bake your precooked chickpeas in the oven at 180 ° C for about 15-20 minutes , until they become crispy, and add them on the plates.
