The nuns' tits are a typical Apulian dessert prepared with a soft sponge cake and filled with custard.

The nuns' breasts, also known as Apulian sighs, are a typical dessert from Altamura . As it is easy to guess, they owe their name to the particular shape that the sponge cake takes during cooking. The recipe, in its simplicity, hides some pitfalls. Many people complain that the dough doesn't cook well and stays dry so we thought we'd give you the original nun's boobs recipe. For an excellent result it is important to use flour for cakes (the best is Africano Mix) and carefully follow our steps.

How to prepare nuns' boobs with the original recipe

  1. To prepare the minne di monaca, whip the eggs with the powdered sugar and flour until the mixture is frothy, clear and tripled in volume. We advise you to use a planetary mixer equipped with a wire whisk but if you don't have it, electric whips may be enough.
  2. Transfer the dough to a pastry bag fitted with a medium-large round spout.
  3. Line the muffin mold with paper cups and form a small pile of dough without going over the edge.
  4. Preheat the oven to 180 ° C but when putting it in the oven lower the temperature to 150 ° C so as to obtain a uniform cooking. Cook for 15-20 minutes . To see if they are ready, take one out of the oven and check that it does not deflate.
  5. Meanwhile, prepare the custard. Heat the milk with a vanilla bean cut lengthwise.
  6. Separately, beat the egg yolks with the sugar and corn starch , then pour in the milk, stirring with a whisk.
  7. Put it back on the heat and let it thicken for 3-4 minutes.
  8. Once ready, transfer the cream to a pastry bag with a syringe nozzle and set aside.
  9. Remove the sighs and when they have cooled completely fill them by making a hole in the base.
  10. Just a sprinkle of icing sugar and your desserts are ready to be enjoyed.

Tips and variations

The filling of the sighs of the nuns is not always the same: the greediest, for example, add whipped cream to the custard, thus creating a perfect diplomatic cream (clearer and frothy): for our recipe , 200 g will suffice . In addition, you can also flavor the creams with the addition of cocoa or melted dark chocolate.

A tip is not to replace the indicated flour mix : it can be easily found in supermarkets or pastry shops and it is a perfect mix of starches and sugars for these preparations (but also for preparing ladyfingers or other sweet and whipped recipes) .

storage

The nuns' boobs are good as soon as they are made, already the next day they tend to lose some of their softness. If there are any leftovers, keep them in the refrigerator under a cake bell and consume them within 2-3 days .
