How to make mascarpone and Nutella tiramisu

  1. Prepare the coffee with the moka until it reaches 120 ml , then put it on a plate and let it cool.
  2. Let's start preparing syrup to pasteurize the egg yolks. Take the sugar and dissolve it with water in a saucepan. Bear in mind that for 80 g you will need approximately 50 g of water. Continue mixing until you have obtained a thick syrup (the optimal temperature would be 121°C ).
  3. When the syrup is at around 110°C, place the egg yolks in a bowl and start whipping them with the electric whisk, in the meantime the sugar will have reached 121°C, at this point pour it slowly into the egg yolks, continuing to mix with the electric whisk so that the yolks don't tear.
  4. Continue whisking everything until you obtain a light and fluffy mixture.
  5. Using a spatula, add the mascarpone cream and incorporate it well, mixing from bottom to top to prevent the egg yolks from dissolving.
  6. Let's now move on to the Nutella cream: heat it in the microwave for a few seconds, just long enough to soften it, then mix it with the milk to make it slightly more liquid and leave it aside
  7. Dip the ladyfingers in the coffee and spread them on the base of a baking dish measuring approximately 18×18 cm , then start making the layers, alternating the Nutella with the mascarpone cream and the other ladyfingers.
  8. Finish with a layer of mascarpone and covering the entire tiramisu with bitter cocoa powder.
  9. Finally, leave it in the refrigerator to cool for at least an hour, covering it with transparent kitchen paper.
