It doesn't take much to bring a tasty side dish like pan-fried broccoli and carrots to the table. Let's see together how to make this vegan recipe!

Among January vegetables , broccoli reigns supreme. Little loved by children, they are a concentrate of vitamins and mineral salts with a very low caloric intake. The best way to consume them is to boil them or steam them , and then possibly sauté them in a pan.

Pan-fried broccoli and carrots, thanks to their color combination, are ideal as a side dish , or as a light vegetable-based second course. To flavor them, in addition to a good extra virgin olive oil, you can use a few spoons of soy sauce or the tastier Worcester sauce.

How to prepare broccoli and carrots in a pan

  1. First, clean the broccoli : remove the tops with a knife and keep the stem aside. Rinse them well under running water and place them in a steam cooking basket.
  2. Now prepare the carrots . If you use the baby ones, simply wash them and put them in the basket together with the broccoli . If you use traditional ones, wash and peel them and then cut them into slices about half a centimeter thick. In this way the cooking times of the two vegetables will be equivalent.
  3. Put two inches of water in a pan, place the basket and cover with the lid. Cook broccoli and carrots for about 15 minutes or until tender. You can carry out the same operation with the bimby or with the pressure cooker. In the latter case, however, halve the time.
  4. Once ready, heat the oil with the chilli pepper in a pan. Then add the vegetables and when the pan is hot again, add the soy sauce.
  5. Serve this side dish of carrots and broccoli hot, adding only a pinch of salt if necessary.

With these two ingredients, you can also prepare an excellent meatloaf !

storage

We recommend storing the vegetable side dish in the fridge for 2-3 days , covered in cling film or inside a container with an airtight lid.
