Pan-fried courgettes with tomato: we are sure you will love them
Courgettes with tomato and basil are a quick and really easy side dish to prepare. Here's what you need!
Courgettes in tomato sauce are a simple recipe and particularly suitable for summer, when the freshest and best courgettes are found. The best type of courgette for this dish is the Roman one. Alternatively you can use the green ones as long as they are small. This side dish is perfect for meat or fish dishes, but if necessary it can be transformed into an excellent condiment for pasta or rice.
The real secret lies in being able to cut the courgettes as close to the same size as possible, so as to obtain homogeneous cooking and allow them to flavor with the tomato. Let's see the steps of the recipe immediately!
How to prepare the courgettes with tomato recipe
- To prepare stewed courgettes with tomato, start by washing the courgettes, then trim them and cut them into more or less equal cubes.
- Pour a couple of tablespoons of oil into a pan, add the peeled garlic clove and fry over a low heat for a few minutes (if you want to make your vegetable side dish even tastier, you can also add a fresh red chilli pepper at this time ).
- Add the diced courgettes , mix to grease them well and brown them for a couple of minutes before putting the lid on. This way they will taste better.
- After 5 minutes, add the tomato puree, season with salt and a few basil leaves.
- Continue cooking for another 15 minutes , taking care that the sauce does not dry out too much. In this case you can simply add a little hot water .
- Once cooked, serve the courgettes with the sauce immediately and enjoy them as a side dish for your favorite dishes.
In a completely similar way you can make courgettes with tomato sauce using fresh cherry tomatoes . In this case you will always need around 300 g . Wash them, cut them in half and put them in the pan immediately with the courgettes and a pinch of salt. After a couple of minutes on high heat, cover and continue cooking for another 15 minutes or until they are very tender.

storage
You can store the courgettes prepared following this recipe in the refrigerator for a maximum of 2-3 days after cooking in a special container. Leftover courgettes can be heated in a pan for a few minutes and served again as a side dish or used on bruschetta or other preparations based on what your imagination suggests.
