Pan-fried potato cake

There is no more versatile and popular ingredient than potatoes . From gnocchi to fillings through to main courses and side dishes, the recipes with potatoes are among the few that everyone can agree on. The filling is at your discretion but what really cannot be missing is a stringy cheese . Then the choice is yours: cooked ham yes or no? For us it's a resounding yes, but it goes without saying that it's easy to make this dish suitable for vegetarians too.
How to prepare the skillet potato cake recipe
- First, wash the potatoes and cook them in their skin, starting with cold water, until they are tender. The time varies depending on the size of the potatoes from 24 to 45 minutes. To speed up the recipe, however, you can also peel them, cut them into pieces of about 3 cm and boil them in plenty of salted water. In this case it will take about 20 minutes .
- Once tender, mash them with a fork and transfer them to a bowl to cool.
- Add the egg, parmesan, a pinch of salt and the breadcrumbs and mix everything quickly.
- Oil a 24 cm diameter non-stick pan and spread half the mixture on the bottom, pressing with your hands.
- Distribute the cheese and sliced ham, leaving just 1 cm around the edge, then cover with the leftover potato mixture, taking care to seal the edges well.
- Cook over medium-low heat for 10 minutes then, using a lid, turn it over and continue cooking for another 10 minutes.
- Transfer to a plate and serve while still hot and stringy.

The pan-fried potato cake will keep for 2-3 days in the refrigerator , well covered with cling film. We advise you to heat it up a few minutes before enjoying it.
