Pan-fried zucchini and carrots, a light side dish
Let’s find out how to prepare a tasty side dish based on zucchini and carrots in a pan in less than 30 minutes.
Creating combinations of two or more vegetables is a great way to bring a tasty side dish to the table but at the same time light and quick to prepare. This is the case of sautéed zucchini and carrots, perfect to accompany meat and fish dishes and ideal if you really don’t know what to cook other than a salad.
Preparing this healthy side dish is really simple because it will be enough to cook the vegetables in a pan with some flavor until they are tender and then serve. To perfume the dish we used parsley and garlic that go well with both carrots and zucchini but you can also opt for mint or thyme.
How to prepare the carrot and zucchini recipe in a pan
- First wash the courgettes, remove the ends and cut them into quarters lengthwise and then into chunks . Also peel the carrots and, after removing the ends, cut them in the same way.
- In a pan, heat the oil with the garlic clove (for a more delicate flavor leave it unpeeled) then add the carrots and courgettes. Cook over a high flame for a few minutes then put the lid on and adjust the heat to medium power.
- Cook for about 15 minutes or until the vegetables are tender, then season with salt and pepper and season with freshly chopped parsley. Before serving, remember to remove the garlic clove.
If you want, you can also prepare the simplest sautéed zucchini , a simple but very tasty summer side dish able to satisfy all needs.
storage
This side dish based on sautéed zucchini and carrots can be kept in the refrigerator for 2-3 days . It can be heated both in the pan and in the microwave before consuming.
